Alternative Sweeteners


Unlike other sweeteners that store their energy as starch, Agave syrup stores it’s energy as inulin . Inulin is typically found in roots or rhyzomes. There is no starch in Agave Syrup. Inulin bypasses digestion in the stomach and small intestine and is actually digested in the large intestine. Inulin actually feeds the probiotic bacteria in our digestive system.  It has a low glycaemic index, so is a viable alternative sweetener  for those with blood sugar disorders such as Diabetes.  Agave also tastes delicious - a little like maple syrup and little like  caramel or fairy floss. Agave can be used as a sugar  replacement in any recipe - use 25% less agave than you would use  sugar. Is great in raw deserts, particularly raw chocolate!! Make sure your agave is the Wild Maguey (Salmiana) variety of succulent rather than the Blue Webber variety, that it is organic and organically processed at low temperature



Is a subtropical fruit grown almost exclusively in South America . It is renowned as one of the top dessert flavours in the continent - it rivals even chocolate and vanilla in popularity. It has a subtle and rich maple or caramel-like flavor and is an It is an excellent low-glycemic addition to deserts.

Lucuma powder is an excellent source of complex carbohydrates, fiber, vitamins and minerals and is also a great source of the antioxidant beta-carotene as well as niacin and iron.

It is delicious in desserts, especially raw treats such as home made ice cream. It is excellent in smoothies and any raw food drinks, especially those that you want to be creamy, such as herbal teas, nut milk drinks, and chai.

The Yacón is a plant grown in the Andes of Perú. It has crisp, sweet-tasting tubers and provides for two nutritional products: the syrup and tea.

Yacon syrup is wonderful as a sweetener as it contains low sugar properties. This is because the tuber is comprised of FOS (fructooligosacharides), a special type of fructose that the human body can not absorb. It therefore leaves the body undigested. It is ideal for those with blood sugar disorders (e.g. diabetes and hypoglycaemia) and those on weight loss or low sugar programs. It has a very low glycaemic index.

Mesquite meal is a traditional Native American food produced by gathering ripened seed-pods from the mesquite tree and grinding them into a fine powder. The meal is high in protein (40%) and contains good quantities of calcium, magnesium, potassium, iron and zinc. Mesquite is also rich in the amino acid lysine.

Researchers report that mesquite is highly effective in balancing blood sugar as the sweetness is from fructose. Fructose doesn't require insulin to be metabolized. The high content of soluble fibre also aids in slower processing of nutrients preventing spikes and valleys in blood sugar.

It has a sweet, rich, molasses-like flavor with a hint of caramel which blends well into smoothies or other drinks, especially those made with cacao and maca.

If you’ve ever tasted stevia, you know it’s extremely sweet. In fact, this remarkable noncaloric herb, native to Paraguay, has been used as a sweetener and flavour enhancer for centuries. The Guarani in Paraguay traditionally used stevia nutritionally and medicinally.

The plant came to the attention of the rest of the world when South American naturalist, Bertoni, "discovered" the plant in the late 1800's.

Stevia's most obvious and notable characteristic is its super-sweet taste. However, the sweet taste is not due to carbohydrate-based molecules, but to several non-caloric molecules called glycosides. Individuals who cannot tolerate sugar or other sweeteners can often use stevia. 

During WWII, sugar shortages prompted England to begin investigation of stevia for use as a sweetener. Cultivation began under the direction of the Royal Botanical Gardens at Kew, but t
he project 'was abandoned in the aftermath of the war'. Japan began cultivating stevia in hothouses in the 1950's. By the 1970's, Japan started using stevia commercially and today, they are the biggest users of the extract, which has captured 50% of Japan's sweetener industry.

Other aspects of stevia are capturing people's attention. The herb is sold in some South American countries to aid diabetics and hypoglycemics. Research has shown that a whole leaf concentrate has a regulating effect on the pancreas and helps stabilize blood sugar levels. Stevia is therefore useful to people with diabetes, hypoglycemia, and Candidiasis (when utilised in a non-processed form).

Other traditional uses of stevia are to lower elevated blood pressure (hypertension), digestive aid that also reduces gas and stomach acidity, and for obesity. The herb acts as general tonic which increases energy levels and mental acuity.
